Berry Martini with Sabayon Sauce
4 ounces Sugar
1/2 Cup White Wine (traditionally Marsala)
3 Egg Yolks
1 Cup Lightly Whipped Cream
1/2 Pt each of Raspberries, Black Berries, Blue Berries
1 Pints strawberries, stemmed and cut into quarters
• Whip yolks, sugar and wine on a slow fire (double boiler) till frothy (approximately 20 min.), fold in whipped cream at very last minute
• Toss mixed berries with a little sugar, balsamic vinegar and black pepper in a bowl and portion into martini glasses and top with sabayon sauce
